Job Description

Title:  Kitchen Manager


FLSA Status:  Non-Exempt


Classification:  Administrative Support


Immediate Supervisors:  District Nutrition Program Manager and Assistant District Nutrition Program Manager

Job Summary:  This position is responsible for the operations of main schools food service and its satellites so that the requirements of the state are met and students are served a nutritious, well-balanced, attractive meal at the prescribed time according to the school schedule. 


 


Hiring Specifications:


Education



  • High school diploma or equivalent


Certification



  • Current Servsafe Certified or equivalent


Experience



  • Minimum of 3 years experience in food service, preferred


Skills, Knowledge and Abilities:  



  • Knowledge of meal production, planning and scheduling. 

  • Knowledge of applicable District, Federal and State laws, rules and regulations related to food service and quantity food preparation and food merchandising. 

  • Knowledge of nutrition, sanitation, operation regulations and requirements and use and care of institutional equipment and utensils.

  • Knowledge of procedures used in ordering, receiving, storing and inventorying food and supplies. 

  • Knowledge of health and safety rules and regulations pertaining to food establishments including sanitation and maintenance regulations. 



  • Ability to manage and coordinate the day-to-day food service operation at an assigned school site. 

  • Ability to assure compliance with District, State and Federal requirements. 

  • Ability to train others in the preparation and serving of food in large quantities. 

  • Ability to read, interpret, apply and explain rules, regulations, policies and procedures. 

  • Ability to schedule, supervise and evaluate staff to meet schedules and timelines. 

  • Ability to analyze situations accurately and adopt an effective course of action. 

  • Ability to operate a computer terminal as required. 

  • Ability to work independently with little direction. 


 


Technology Requirements



  • Basic computer skills (computer navigation, email, web browser, Employee Portal)

  • Intermediate computer skills (Google Suites, search function, other information systems)

  • Ability to reach all skill levels listed if not already acquire


 


Supervision of Others:



  • Supervision of cooks, and general workers at their central location and satellite kitchens

Job Duties:



  1. Manages, coordinates and oversees the day-to-day food service operations at an assigned school site; analyzes effectiveness, assures compliance with the District, State and Federal laws, regulations, safety and sanitation procedures.

  2. Estimates and orders amount of food and supplies needed; monitors and controls expenditures

  3. Trains and assists employees in the proper handling of foods, correct use and care of equipment and high standards of sanitation and safety. 

  4. Maintains, prepares and reviews a variety of menu production records, inventories, logs and reports; accumulates data and inputs information into a computer as appropriate and files documents as necessary

  5. Adjusts work schedules (kitchen staff) according to the menu.

  6. Oversees portioning and serving.

  7. Ensures proper storage of food, supplies and leftovers.

  8. Receives satellite counts and reviews/adjusts to ensure proper quantities of food and equipment are provided.

  9. Evaluates each prepared menu item to ensure it meets quality and quantity standards.

  10. Checks deliveries for quality and accuracy

  11. Supervises the cleaning of kitchen equipment and dining tables.

  12. Addresses safety and sanitation hazards as they occur.

  13. Fill in for missing staff as necessary to assure the students are served a proper meal.

  14. Performs other duties as may be assigned.
