Position Summary

The Sushi Cook is responsible for preparing and presenting high-quality sushi, sashimi, nigiri, and specialty rolls while maintaining the highest standards of food safety, cleanliness, and consistency. The ideal candidate is organized, detail-oriented, and capable of maintaining composure during busy services.

Responsibilities

Prepare sushi rice, sauces, garnishes, and mise en place daily.
Fabricate and portion seafood according to company standards.
Prepare nigiri, sashimi, maki, hand rolls, and specialty rolls with precision and consistency.
Maintain exceptional product quality, presentation, and freshness.
Follow standardized recipes and plating specifications.
Monitor inventory levels and communicate product needs to management.
Practice proper food handling, labeling, rotation, and sanitation procedures.
Keep the sushi station clean, organized, and service-ready at all times.
Work efficiently with the kitchen team to ensure timely ticket execution.
Assist with receiving, storing, and organizing deliveries.
Support teammates and contribute to a positive kitchen culture.
Qualifications

Minimum 2 years of professional sushi experience preferred.
Strong knife skills and seafood fabrication experience.
Knowledge of sushi rice preparation and traditional Japanese techniques.
Ability to work efficiently in a fast-paced, high-volume environment.
Excellent attention to detail and commitment to consistency.
Reliable, punctual, and professional attitude.
Flexible availability, including nights, weekends, and holidays.
Ability to stand for extended periods and lift up to 50 pounds.
