Job Description

Department: TUL Banquets and Catering

Property: River Spirit Casino Resort

Location: Tulsa, OK, US, 74137

Full-Time/Part-Time: Full Time

Summary:
Lead cook position that requires advanced culinary skills. This position requires decision making and supervisory skills in the absence of the Banquet Chef. Other duties may be assigned.

Responsibilities:

1. Ability to produce a quality product on a consistent basis.

2. Conceptual understanding of advanced cooking skills.

3. Knowledge of knife usage and all sanitation and safety requirements.

4. Must have conceptual understanding of broiling, brazing, roasting, poaching, sauces, carving stations and cold food production.

5. Prepares and serves breakfast, lunch, dinner, reception buffet items per production orders and/or ala carte guest checks under the direction of the Banquet Chef on duty.

6. Ensure that the food is out in a timely manner, so that it can be set up in time for our clients as established by the Executive Chef.

7. Quality taste check on food items being served to ensure highest quality levels at all times.

8. Must have working knowledge of food handling safety and sanitation.

9. Ability to run the banquet kitchen with minimal supervision.

10. Maintains care and cleanliness of kitchen equipment, walk-ins, utensils, work areas, etc.

11. Ensures that all food is wrapped, labeled and dated. All groceries when received must be dated and rotated so that we are performing First in First out. Proper rotation.

12. Must be able to follow direction and execute parties as instructed by the banquet chef. 

13. Clean equipment as needed to maintain for the longevity of the equipment. 

14. Maintains a professional appearance at all times. 

15. Ability to manage and supervise culinary and other staff as required. 

16. Assumes/performs other duties as assigned. 

QUALIFICATIONS 

To perform this job successfully, an individual must be able to perform each essential duty satisfactorily. 

The requirements listed below are representative of the knowledge, and/or ability required. 

EDUCATION 

Ability to read, write and understand English. High School Diploma or GED preferred. 

EXPERIENCE 

Basic computer skills, including email, time-clocks/electronic time-clocks. 5 years culinary experience preferred. 

LICENSES/CERTIFICATIONS 

Tulsa County Food Handler’s Card is required for all F&B positions. 

Must have the ability to pass comprehensive background check, drug test, and obtain gaming license when required.  

JOB DEMANDS 

The physical demands described here are representative of those that must be met by an employee to successfully perform essential functions of this job. Has ability to lift and carry at least 50 lbs. up to 42” and Push/Pull force of 100 lbs. Ability to stand for long periods of time; squat, crouch, reach, and maneuver in all areas of kitchen and casino, frequent ascent/descent from bus stairs, travel to various on/off site venues, which may involve elevation changes in surfaces. Visual acuity to discern and examine text, graphics, color and symmetry. Speech to communicate clearly, express ideas and convey information in an understandable manner. Ability to hear for listening comprehension and to understand ideas presented through spoken words and sentences. Manual dexterity to operate office equipment and examine documents, records and files.
