Summary

The Food & Beverage Specialist, under the general supervision of the Operations Coordinator, to assist in the daily operation and oversight of the Frank W. Mayborn Civic & Convention Center’s F&B Department. This role supports concessions, bars, and catering logistics while ensuring inventory control, kitchen compliance, and equipment functionality. Collaborating with management and caterers, the Specialist ensures event readiness, high service standards, and operational efficiency.

 

Essential Duties and Responsibilities

  • Assists the Operations Coordinator with tracking and maintaining records of approved third-party vendors and caterers.
  • Checks third-party caterers into and out of the kitchen as required, ensuring compliance with facility policies and kitchen procedures.
  • Conducts kitchen inspections prior to events and post-event to ensure cleanliness, compliance, and proper equipment condition.
  • Oversees stocking and organization of all perishable, non-perishable, beverage, and paper goods for concession stands and bars.
  • Assists with conducting inventory counts before and after events and maintains accurate inventory documentation.
  • Prepares concession stands and bars prior to events, ensuring proper setup, cleanliness, and operational readiness.
  • Assists with development and updates of concession and bar menus, including standard menus and specialty or event-specific offerings.
  • Works with the Operations Coordinator and Venue & Guest Operations Manager to track sales trends, analyze product performance, and monitor guest satisfaction.
  • Collaborates with Facilities to create and submit work orders for kitchen equipment repairs and maintenance needs.
  • Monitors condition of kitchen equipment and proactively reports operational concerns.
  • Maintains cleanliness and organization of kitchen, concession areas, storage rooms, and bars.
  • Assists with implementation of food safety standards and ensures compliance with Texas Department of Health and TABC regulations.
  • Supports financial accountability through accurate product tracking and shrinkage control.
  • Adheres to attendance policy; ensures punctuality for assigned shift
  • Follows City policies, procedures, and safety guidelines
  • Performs other duties as assigned

          

Minimum Qualifications

  • Combination of education and experience equivalent to high school diploma or GED
  • Two (2) years of experience in Food & Beverage operations, hospitality, concessions, or related field
  • Experience with inventory tracking and stock management
  • Working knowledge of food safety practices and kitchen operations
  • Ability to analyze basic sales and inventory data

 

Preferred Qualifications

  • Associate’s degree in Hospitality, Food & Beverage Management, or related field
  • Experience in a convention center, civic center, or high-volume event venue
  • Experience with POS systems
