Key Accountabilities 

  • To function as a key leadership by working closely with Director of Food and Beverage to support the effective planning, coordination and execution of all F&B operations
  • The role helps ensure the department remains engaged, responsive, and aligned with Peninsula brand standards through visible floor leadership, thoughtful guidance, and clear priorities
  • To play an active role in encouraging continuous imporvemnet by supporting teams in refining service approaches, strengthing operational readiness, and embracing situational decision- making 
  • To promote flexibility in guest engagement- moving beyond routine gestures toward more personalized , considered experiences- while fostering confidence, accountability, and steady forward momentum within the department

Requirements

  • Senior leadership experience in luxury food and beverage operations within hotels or high-performing freestanding restaurant environments
  • Strong, practical beverage knowledge across wine, spirits, cocktails, and non-alcoholic programs, applied confidently on the floor
  • Results driven leader with commercial awareness and the initiative to challenge established practices
  • Ability to balance strong guest recognition with curated upselling and value-led experience enhancements 
  • Comfortable with direct leadership, performance accountability, and team development
  • Fluency in English, Japanese language proficiency or Japanese culture understanding is an advantage
