Glenwild Restaurant and Clubhouse is seeking an experienced Sushi Chef, for our high end Japanese menu. Applicants must be able to fillet fish, prepare all pertinent ingredients (including sushi rice), and maintain a clean/organized work space. Our menu is grounded in traditional preparation, but creativity and flexibility are a must, as we cater to the demands of our exclusive club members. Additionally, all sushi is prepared in front of an audience, so maintaining a professional appearance, and good communication skills are required. Hours are Wednesday through Sunday 1:00-9:00pm, with some room for flexibility.
Sushi Chef Responsibilities:
- Preparation of sushi rice and ingredients.
- Filleting and cutting sushi fish and proteins.
- Maintaining a clean and organized work space--in accordance with health codes and guidelines.
- Preparing sashimi, nigiri-sushi, and maki-sushi (rolls).
- Maintaining proper inventory and portion control.
- Help with neighboring food station, when needed.
- Communicating with front of house, to ensure excellent customer experience.
Sushi Chef Requirements:
High school diploma or GED.
Advanced knife skills
Experience in high end sushi and Japanese dining.
Food Handlers certification and training.
Good communication and customer service skills.
Ability to be flexible and work under pressure.
Meal planning and multi-tasking skills.
Seasonal full-time and part-time positions available. Pay dependent on experience.
