SUMMARY:
The Head Chef oversees daily back-of-house operations, food production, staff supervision, ordering, inventory, and food safety. This role supports the Executive Chef by ensuring consistent food quality, efficient kitchen operations, and compliance with sanitation and departmental standards.
KNOWLEDGE AND CERTIFICATION, SKILLS AND ABILITIES
Knowledge and Certification
Required:
- High school diploma or GED required
- Minimum 3-5 years of professional kitchen experience, including leadership or supervisory responsibilities
- Strong knowledge of food preparation, kitchen operations, and food safety standards.
Preferred:
- Serve-Safe certified (required within 60 days of employment if not current)
- Basic Food Handler Certification
- Fine dining or high-volume kitchen experience.
- Working knowledge of restaurant equipment and BOH systems.
- Experience with food ordering, inventory control, and food costing.
Skills & Abilities
Required:
- Strong leadership and communication skills.
- Ability to supervise, train, and motivate kitchen staff.
- Proficient in basic computer skills (Word, Excel, email).
- Solid understanding of food costing, waste control, and portioning.
- Time management and organizational skills.
- Ability to follow and enforce standardized recipes and procedures.
- Ability to read, write, and communicate effectively with staff management.
- Ability to stand for long periods of time.
ESSENTIAL DUTIES AND RESPONSIBILITIES
- Supervise BOH staff and daily kitchen operations.
- Ensure food quality, consistency, and presentation standards.
- Oversee food preparation, recipes, and portion control.
- Manage ordering, inventory, storage, and product rotation.
- Monitor labor, attendance, and staff performance.
- Enforce food safety, sanitation, and health regulations.
- Support the Executive Chef and Sous Chef with operational needs.

The team member is regularly exposed to risk of radiation (from computers), as a great deal of the workday is spent working on spreadsheets or inputting data into the computer system.
Office, gaming floor and convention center environment including flashing lights, frequent loud noises and cigarette smoke. Extensive computer use. Must handle hazardous materials. Must be flexible with work schedule. Must be willing to work any hours and/or shift, as assigned, according to business needs. Occasionally must deal with angry or hostile individuals. High volume direct public contact.
