The Lead Cook reports directly to the Executive Chef and Sous Chef. Prepares, cooks and delivers meals, and stocks kitchen supplies to the MRU & ALF satellite kitchens. Responsible for maintaining proper food inventory and production levels for Kitchen, Terrace and Metcalf units. Must be able to perform work with very little or no supervision. Acts as Chef during the absence of Executive Chef or Sous Chef.
Essential Job Functions:
Work duties may include, but are not limited to:
- Preparing and cooking a wide variety of food for residents, employees and visitors in accordance with standardized recipes.
- Acts as Chef During Absence of Executive Chef or Sous Chef
- Preparing and cooking breakfast/lunch/dinner.
- Assisting in preparation for special event meals.
- Assisting in the planning, organizing, motivating and coordinating service.
- Opening and/or closing of department as assigned.
- Controlling and promoting efficiency in work and suggesting changes that will improve productivity.
- Performs a variety of cleaning duties to maintain order and sanitary conditions in restaurant kitchen according to state regulations and departmental procedures.
- Checks food and Kitchen Supplies ensures cooking utensils, pans and other equipment are kept in a clean and sanitary condition.
- Assigns cleaning duties as needed. Ensure adherence to cleaning schedule.
- Ensure all food preparation and kitchen is cleaned and ready for the next shift.
- Assist in the training of Kitchen personnel both front and back of house
- Record food temperatures, production and waste on required documentation.
Qualifications
Required:
- Must pass DHS background check and drug screening
- High school education
- Minimum two (2) years’ experience in full service or institutional food service environment
- Vocational training specializing in the culinary arts, or culinary arts degree preferred.
- Food handlers’ card.
Knowledge:
- Skills in organization, appearance and demeanor; must speak, read, write & understand English and the ability to interact effectively with customers and other personnel
- Knowledge of food service and sanitation standards
- Ability to consistently arrive punctually and contribute to a positive dining atmosphere
- Knowledge of cooking in large quantities; ability to standardize recipes, knowledge of weights and measures and conversions.
- Handles high level of activity and multiple priorities in calm manner with common sense and independent action.
- Considers cost of supplies when performing duties.
- Promotes teamwork, outwardly supports Plaza mission statement and goals.
- Maintains a calm, professional demeanor to others.
Skills:
- Knowledge of and ability to execute all basic culinary techniques fluently at the professional level.
- Knowledge of kitchen equipment, utensils and basic knife skills
- Knowledge of safe food handling and workplace safety
- Knowledge of operation and maintenance of food service equipment
- Knowledge of execution of cleaning lists
- Knowledge of waste management
- Providing consistent food products
