About the role
Al Mare will be destination restaurant in the heart of Knightsbridge, it infuses an exquisite Mediterranean coastal cuisine with modern flavours in a refined and inviting atmosphere. With plates designed for sharing, Al Mare is the perfect backdrop for living unforgettable moments and creating lifelong memories.
We currently have opportunities for Chef de Rang to join us and be an instrumental part of this exciting project.
As Chef de Rang, your role will be to serve guests requirements to their satisfaction, efficiently and courteously to the Jumeirah Service Standards. To supervise, assist and develop runners on their station, in order to ensure correct procedures and standards are maintained. Your responsibilities will include;
- To ensure that all guest request are correctly logged.
- To have a good knowledge of the menu and styles of service.
- To be fully conversant with the table lay-up and mise-en-place prior to, during and after service.
- To assist and supervise Commis Waiters and Runners.
- To take guest orders and process correctly and speedily in the most courteous way.
- To undertake cashiering duties and take responsibility for the record of all items on bills, present bills to guests, collect and process payments whilst adhering to the correct credit policies.
- To actively “up sell” to enable revenues to meet budget forecast.
- To precisely requisition all food, wine and liquor stores.
- To inform Management of all guest comments and requirements that cannot be resolved immediately.
- To assist in the training of colleagues ensuring that they have the necessary skills to perform their duties with the maximum efficiency and in the most productive manner.
About you
The successful candidate will have the following experience and skills:
- Have experience within a luxury restaurant environment, Michelin star experience preferred
- Have a passion for your work and the ability to innovate, with a proven track record within luxury environments
- Have the ability to operate in a diverse and luxury environment with a focus on guest experience
- Be a self-motivator and someone who is ready to challenge in the interest of continuous improvement
- Excellent level of English
- Be friendly, approachable and professional
- Have a high degree of knowledge in Food Hygiene and Safe Working Practice
