Job Description

  1. PURPOSE OF POSITION



To perform the daily operation of the dish machine and other assigned tasks. Ensures thorough cleaning and sanitizing of dishes while executing duties in a timely and organized manner following established policies and procedures, time a timely manner.




  1. REPORTING RELATIONSHIPS




  1. Reports Directly to: Sous Chef

  2. Supervises Directly: N/A

  3. Other Important Contacts: General Manager, Human Resources, Tribal Gaming Agents, Casino Supervisors and Managers, and casino guests.




  1. DUTIES AND RESPONSIBILITIES




  1. Washes dishes, pots, pans, flatware, and glassware using the appropriate dish machine or hand washing method.

  2. Maintains adequate soap, rinse and sanitizer chemical supply for the shift.

  3. Maintains the dish machine and dish area in respects to cleanliness and deliming procedures as outlined in the dish machine manual.

  4. Retrieves dirty dishes from bar, buffet and employee break areas in a timely fashion, being courteous to our guests and employees when in other areas of the casino.

  5. Puts away clean dishes and other items in an orderly fashion minimizing breakage and putting them away in a safe manner.

  6. Takes out trash in a timely fashion to avoid overflow and replaces empty trashcans with new trashcan liners.

  7. Assists in training new dish machine operator personnel.

  8. Whenever caught up helps out the crew with prep, cleaning, and/or other projects.

  9. Observes sanitation, personal hygiene and safety procedures for the shift.

  10. Assures entire staff observes clean and sanitize as you go policies.

  11. Works in other areas of the kitchen as required.

  12. Assists kitchen staff in maintaining an organized and clean department.

  13. Other duties as assigned and/or required.
