We are looking for a skilled and passionate Sushi Chef to join our culinary team. You will be responsible for preparing high-quality sushi, sashimi, and other signature dishes.

 

Key Responsibilities:

  • Preparation & Execution: Prepare all types of sushi (Nigiri, Sashimi, Maki) with precision and speed.

  • Fish Management: Select, break down, and store fresh fish according to food safety standards; monitor inventory and ensure minimal waste.

  • Quality Control: Ensure all sauces, rice, and garnishes meet our high standards for taste and presentation.

  • Safety & Sanitation: Maintain a spotless workstation and strictly follow health department regulations (HACCP).

 

Required Qualifications:

  • Minimum of 3 years of experience as a Sushi Chef or Lead Line Cook in a high-volume sushi restaurant.

  • Expert-level knife skills and knowledge of traditional Japanese fish-cutting techniques.

  • Deep understanding of sushi rice preparation and seasoning.

  • Valid Texas food handler’s certification.

  • Ability to stand for long periods and work in a fast-paced environment.

Requirements

PHYSICAL AND WORKING ENVIRONMENT

  • Must be able to stand or walk a minimum of eight hours.
  • Must be observant and quick to respond to various situations while also multitasking and handling stressful situations.
  • Must be able to twist, tow (push or pull), reach, bend, climb, and carry objects as necessary.
  • Must be able to lift to 25 pounds.
  • Must have excellent communication skills and be able to read, write, speak, and understand English.
  • Must be able to work in a fast-paced and high-volume environment in the presence of areas containing high noise levels, bright lights, and dust, and communicate during this time – sometimes within a small area.
  • Must be able to work inside and outside at all times of the year as needed, based upon business volumes.
