Cellar Operator
Position Summary:
Trillium is looking for an experienced Cellar Operator to join the Production team. This position calls for a motivated craftsman with great attention to detail. This is an amazing opportunity to join a rapidly expanding, family-run brewery and bring your expertise into the world of craft beer! This position will report directly to the Production Manager at our Canton location.
Job Duties & Responsibilities
- Operate and troubleshoot GEA or similar centrifuge systems efficiently.
- Operate the Good Nature flash pasteurizer in accordance with production schedules.
- Perform daily monitoring and data collection of fermentation and conditioning tanks, including gravity, CO₂ levels, and temperature.
- Manage Hopnik operation for dry hopping procedures.
- Operate dosing tanks for precise adjunct additions.
- Execute fruit additions into fermentation tanks following sanitary protocols.
- Conduct all tasks related to the barrel aging program, including filling, monitoring, and racking barrels.
- Perform beer carbonation procedures using Gehaltemeter equipment.
- Complete CIP (Clean-In-Place) processes for fermentation and brite tanks.
- Manage yeast health and performance, including harvesting, tracking, and fermentation monitoring.
- Adhere to all QC/QA protocols established by the cellar team.
- Maintain accurate and timely documentation in compliance with company practices.
- Participate in regular sensory panels and tastings for quality assurance.
- Provide support for wild beer program operations as required.
- Assist with beer production tasks across all Trillium locations as needed.
- Support distillery production operations when required.
- Evaluate raw material quality and promptly communicate any inconsistencies.
- Follow all production safety procedures and comply with OSHA standards.
- Maintain a clean and organized brewery and production floor environment.
Additional duties may be assigned as necessary.
Desired Qualifications & Abilities
Qualifications & Experience
- Minimum of two years’ experience as a Cellar Operator in a medium-sized production brewery or packaging brewpub.
- Hands-on experience operating a centrifuge in a brewing or beverage production environment.
- Proven experience with flash pasteurization equipment.
- Barrel-aging program involvement, including handling, filling, and monitoring.
- Familiarity with Hopnik equipment for dry hopping.
- Experience using Gehaltemeter or similar devices for carbonation measurement.
Knowledge, Skills, & Abilities
- Certified or competent in forklift operations.
- Willingness to assist with tasks outside the traditional scope of the Cellar Operator role.
- Flexibility to work a rotating schedule, including Monday through Saturday coverage, with 4–5 consecutive days per week.
- Proficient in basic computer applications, with adequate writing and math skills for documentation and reporting.
- Ability to frequently lift up to 60 pounds to shoulder height.
- Capable of standing for extended periods and performing physically demanding tasks.
- Ability to stoop, kneel, crouch, and crawl frequently during work shifts.
- Comfortable working in wet, cold, and humid conditions.
- Ability to work safely near moving mechanical parts and follow established safety procedures.
- Knowledge of and adherence to proper handling of hazardous chemicals, with a strong commitment to safety protocols.
