SMOKER
ESSENTIAL FUNCTIONS:
The Smoker is responsible for the preparation and smoking of meats following our recipes to produce perfect and consistent results. If we don't have the smoked meat - we can't sell the BBQ. The Smoker also performs required sanitation and kitchen cleaning to the standards of cleanliness.
- Trim, rub, slice, and smoke meats.
- Cook properly all food items within established time standards and follow all standardized recipes.
- Calculate and write production levels and pars.
- Operate and check smokers for proper settings, functionality, and temperatures.
- Maintain a safe, secure, and healthy work environment by cleaning workstations, equipment, and utensils.
- Exceed quality standards and provide superior food products and services.
- Understand and comply with kitchen sanitation, safety, and equipment usage.
- Understand and comply with proper food preparation, cooking, handling, and storage.
- Assist in putting away incoming orders and deliveries.
- Perform other job-related duties as assigned.
KNOWLEDGE AND SKILLS:
- Must possess a deep understanding of barbeque cuisine and have a passion to be the best.
- Advanced understanding of professional cooking, knife handling skills.
- Capable of using slicing equipment and other food preparation equipment.
- Ability to be organized and capable of multi-tasking with efficiency.
- Ability to work in a face paced environment.
- Ability to go up and down stairs.
- Ability to stand and be on feet for extended periods of time in varied climate conditions.
- Ability to carry and lift up to 50 to 80 lbs frequently.
- Ability to work a flexible schedule, including evenings, weekends and holidays. Scheduled days and times may vary based on business needs

EDUCATION AND EXPERIENCE:
- High school diploma or equivalent preferred.
- 1+ of cooking, prep or cutting meat/butcher experience preferred.
- Pay negotiable based on experience and qualifications
HOURS:
6AM-2PM, with possibility of some days ending at 4 p.m. **Weekends Required**
